Pancakes on a weekend - sounds great and we love it! But what about pancakes during your hike, bike or other outdoor activity? They've kept us fuelled from the top of the fells in the Lake District to the beautiful mountain bike single track of Dalby Forest in North Yorkshire.
Our pancakes started out of a desire to keep us fuelled for longer on a walk as we found other varieties only provided us with short term energy due to their high sugar content. These pancakes are full of carbohydrates and protein which are staple for fuelling your outdoor pursuits and helping you recover faster.
Banana and Oat pancakes
Ingredients
Serves 2 people with leftovers to take on a walk
3 Bananas
4 eggs
75g wholemeal flour (or plain flour)
120g oats
Pinch of salt
1 tsp cinnamon
1/2 tsp baking powder
115g soya milk (or other) Optional
300g frozen mixed berries to stew and serve with the pancakes
Method:
Making the stewed berries, tip them into a small pan with a mug of water and bring to the boil, top up with water as you go if required
Preheat the oven to 100deg celcius - this is so you can keep the pancakes warm
Mash the bananas thoroughly then add the eggs
Add the remaining ingredients, adding slightly more or less milk to achieve a fairly thick batter
Leave the batter to sit for 5 minutes to allow the oats to soak up some of the moisture. Meanwile heat a pan on low with some butter or oil
Scoop small ladles of the mixture into the pan, allow to cook low and slow (otherwise they will be soggy in the middle). Turning when slightly brown on the bottom
Transfer onto a baking tray in the oven to stay warm till they're all made and ready to serve with the berries.
Serving suggestion whilst at home:
Pile a stack of 3 and pour the stewed berries on top. A dollop of full fat greek yoghurt goes well too!
